Playful Root Pie

There’s a time for following recipes closely for what makes a nourishing meal (and life!), and there’s a time for making them your own. This flexible recipe allows you to awaken your creativity and intuition. Root to rise as you!
Ingredients
~1 Cup root vegetable (parsnips, sweet potato, beets, carrots, etc.)
1-2 Tablespoons legumes
1/4-1/3 Cup extractive vegetable (greens, asparagus, cauliflower, broccoli, etc.)
Pinch of salt
​Spices (coriander, cumin, fenugreek, cinnamon, fennel, etc.) Ghee
Water

Instructions
  1. Depending upon the cooking times of the root vegetable and legumes, cook separately or together on the stove or in a pressure cooker.
  2. If cooked separately, combine the root vegetable with the legumes. Purée. More liquid will yield a soup like consistency, whereas less will lend itself towards a pie filling or dip.
  3. Prepare the extractive vegetable while the root vegetable and legumes are cooking. Top the root vegetable with the extractive.
