Mini Pie Crust

No need to wait for a special occasion to make a pie crust. We are the special occasion! We are Life! Bring on the pie! 
Ingredients 
3/4 Cup Wheat Flour (~100g or 10 Tablespoons)
​4 Tablespoons Ghee
2 Tablespoons Water
Pinch Salt 
Instructions 
  1. Preheat oven to 375 F/190 C/ Gas Mark 5. 
  2. In a bowl, mix wheat flour and salt. Add in ghee, using your fingers to create a crumbly texture. Add water. 
  3. Dough should be cohesive, smooth, without being overly sticky. You may need to add a bit more water or flour depending upon your environment and the consistency of the flour and/or ghee. 
  4. Roll out dough on to a floured surface making a circle. 
  5. Fold dough in half and then again. Line up the pointed tip of the dough with the center of the pie plate and unfold. Pat dough down into the plate. Cut off any excess dough. With pointer finger and thumb, pinch dough to create a crimped border. Use a fork to prick dough all around the base and sides. 
  6. Bake for 20 minutes or until golden brown. Fill with your choice of goodness. 
  7. Note: You could sprinkle cinnamon on excess dough, wrap a date in it, and top with a pecan or other nut of your choice.
